¾cupscallions, finely chopped white and green parts
¾cupdiced grapes
½cupchopped cilantro
chips for serving
Instructions
Dice the avocado and combine it with the lime juice and salt in a large bowl. Use a pastry blender or potato masher to mash and mix it all together to desired chunkiness.
Stir in the diced pepper, scallions, grapes and cilantro and taste for balance. Add more salt or lime juice if desired. Serve with chips.
Notes
For a lighter snack, use endive leaves in place of chips for scooping and eating.
