Add POM Wonderful 100% Pomegranate Juice to the Instant Pot. Smash the chipotle with a fork and add to the pot with the chicken, salt and onion powder. Close the lid and cook on Pressure Cook (9 psi) for 10 minutes.
When done, shred the chicken and place in a bowl. In another bowl whisk together ⅓ cup of the POM Wonderful cooking broth, honey, lime juice, and salsa. Mix onto the chicken.
Place about one tablespoon of chicken mixture onto each chip. Top with pomegranate arils, a slice of jalapeño and crumbled Cotija cheese.

You can swap cooking the chicken, with a prepared rotisserie chicken:
Use 2 cups shredded rotisserie chicken
Stir in 1 tablespoon adobo sauce (from canned chipotle in adobo)
Add 1 teaspoon honey
Stir in 1 teaspoon lime juice and 1 teaspoon Pomegranate juice
Add 3 tablespoons salsa.
