If you love cilantro add 3 tablespoons instead of 2, or choose to add tomatoes or none! This classic guacamole recipe can be adjusted to your liking. You can double this recipe for a crowd! Makes about 2 cups
2largeripe Haas avocados(You can use 3 small avocados)
2scallionslight and green parts finely chopped
2tablespoonschopped cilantro(you can add 3 if desired)
1smalljalapenoseeded and finely chopped
½cupseeded, diced tomatoes
2tablespoonsfresh lime juice
½teaspoonkosher salt
Instructions
Peel and pit the avocados and cut into pieces. Place in a bowl or molcajete and mash to desired consistency, leaving some marble-sized pieces if desired.
Stir in the scallions, cilantro, jalapeno, tomatoes, lime juice, and salt. Adjust lime juice and salt to desired flavor. Serve fresh!
