    This easy Croissant Breakfast Sandwich recipe has just 6 ingredients. An easy meal prep recipe that's perfect to serve to a crowd. Customize with your favorite breakfast meats and cheeses. You can try adding jam or mustard too!

    Breakfast should be delicious but never too difficult. This easy croissant breakfast sandwich lives up to both requirements.

    This breakfast croissant recipe is both convenient and crowd-pleasing–worthy of both your daily go-to breakfast or special occasion feast.

    Fluffy scrambled eggs, gooey cheese, and salty ham are all wrapped in a crusty, buttery croissant.

    These sandwiches are extremely versatile and can be tweaked to your taste preferences. Bacon lover? Add a few slices (And grab my tip for cooking bacon in the oven.) Fancy a little heat? Drizzle with hot sauce! 

    This is a basic croissant egg sandwich, so the topping possibilities are limitless.

    From my years of writing food columns for magazines, I'm an expert at creating recipes that are impressively delicious, but also economic on time. We don't need to slave away in the kitchen for a good meal.

    This recipe touts all sorts of reasons to add it to your repertoire. Here are some standouts:

    • Versatility: Customize this recipe with bacon, sausage, ham, hot sauce, and/or Dijon. You can add pepper jelly, leave off the eggs, or add tofu eggs. You're choice.
    • Quick and convenient: You're serving a crowd in a speedy 40 minutes. You can easily prep the day before entertaining or at the beginning of a busy week.  
    • Easily doubled: Place oven racks equally in the center of the oven and bake 8 croissant sandwiches at once. Have two ovens? Make even more at once.
    • Indulgent: This is not your typical breakfast sandwich. The croissant and melty cheese make this sandwich extra special. 
    • Effortlessly impressive: While this meal comes together in a snap, it is sure to impress. Whip it up for guests or your family and they will think you are a culinary genius! 
    • Family-friendly: There are sure to be no “picky eaters” with these sandwiches because you can make them exactly like everyone wants.
    • Travels well: These sandwiches wrap-up easily for a speedy breakfast on the go.

    Ingredients for the breakfast croissant recipe

    This easy-to-make dish uses 6 simple ingredients. You can find them all easily at your grocery store.

    • Croissants: Buttery, flakey croissants are the secret to delicious breakfast sandwiches. Grab them from your local grocery store, bakery or big-box store. 
    • Grainy Dijon: Dijon adds a sophisticated kick to the sandwich and makes it even more savory.
    • Hot Sauce: I like Chulula, but you can use any hot sauce you like.
    • American or Cheddar cheese: These sandwiches are thrown in the oven, making the cheese gooey and delicious. I like American cheese because it melts so well.
    • Ham: Brings just the right amount of saltiness to the other indulgent ingredients. 
    • Bacon (optional): For an extra layer of smokey, crispy goodness! Adding bacon is optional but highly encouraged. 
    • Scrambled eggs: I include a recipe below for fluffy and soft scrambled eggs.  

    How to make a croissant breakfast sandwich

    1. Cut croissants in half and place the bottoms on a small parchment-lined baking sheet. croissant being cut into half horizontally with a serrated knife to make a croissant breakfast sandwich
    2. Spread each with a bit of the mustard (or leave the mustard off if you want to use hot sauce) and add a slice of cheese, ham, then more cheese, and bacon if desired. spreading dijon mustard on a croissant and placing amrican cheese and ham on the croissant for a croissant breakfast sandwich.
    3. Add croissant tops to the pan.  Tip the croissant tops onto the pan slightly so the cheese doesn’t stick to it when it melts. Bake in the oven just until the cheese is melty and delicious. placing bacon on top of the croissant breakfast sandwich and then placing the croissant tops to the side of the sandwich
    4. While the sandwiches bake, make the eggs. Whisk together the eggs, salt, pepper, and milk. Melt butter in a skillet and add the egg mixture.     5. When the cheese on the croissants has melted, remove them from the oven. Add a portion of the scrambled eggs to each sandwich. Add hot sauce if desired. Top sandwiches with croissant tops and serve. scrambling eggs on a skillet and adding them to a croissant breakfast sandwich.

    Variations

    Consider the following variations to switch-up your croissant breakfast sandwich and make it your own.

    • Vegetarian: Load your croissant with sauteed vegetables like spinach, mushrooms, bell peppers, and onions along with the eggs and cheese. 
    • Smoked salmon and cream cheese: No need to heat this sandwich. Swap out the regular cheese for cream cheese and add smoked salmon in the place of ham for a delicious twist! You may also add toppings such as capers and red onions to complement the cream cheese. 
    • Mexican fiesta: Add salsa, diced jalapeños, and a sprinkle of Mexican cheese blend for a flavorful twist. Consider topping with chorizo in place of ham.
    • Greek: Eat this hot or room temp. Top your croissant with red onion, Kalamata olives, feta and oregano. Drizzle on vinaigrette too.
    • Pesto and sun-dried tomato: Spread pesto on the croissant, add sun-dried tomatoes, and swap-in mozzarella cheese for the cheddar.

    Storage and Make-Ahead instructions

    These sandwiches are perfect for meal prep. Assemble a batch in advance and simply heat in the oven when ready to enjoy. 

    Make and cool croissant breakfast sandwiches then store in an air-tight container, or wrap the sandwiches individually in aluminum foil or plastic wrap. Refrigerate them up to two days. Just pop in the microwave before eating.

    You can also make them in advance before baking. Just assemble, wrap and store in the fridge until ready to heat on a baking sheet and serve.

    If making them for the holidays, these sandwiches can also be frozen. Wrap each sandwich individually in plastic wrap or aluminum foil to prevent freezer burn and keep the sandwiches fresh. When you are ready to eat, there is no need to thaw. Preheat your oven to 350ºF, unwrap the sandwich, and heat it in the oven for 15 to 20 minutes or until warmed through.

    The best method to get these warm breakfast sandwiches is in the oven. It not only melts the cheese, but allows the croissant to get crispy on the outside and delicious! Plus, you can heat an entire baking sheet of sandwiches at once.

    What are the three components to a breakfast sandwich?

    Typically a breakfast sandwich consists of an egg, breakfast meat, and cheese between layers of English muffin, or croissant. I like using ham or bacon, and whatever cheese I have on hand. You can add any other flavors and ingredients you like as well.

    Ingredients
      

    Scrambled Eggs

    • 5 large eggs
    • 2 tablespoons milk
    • ½ teaspoon kosher salt
    • ½ teaspoon black pepper
    • 2 tablespoons butter

    Croissant Sandwiches

    • 4 large croissants
    • 3 tablespoons grainy Dijon mustard
    • 8 slices American or Cheddar cheese
    • ½ pound sliced ham
    • 8 slices cooked bacon (OPTIONAL)
    • Scrambled Eggs (Recipe above)
    • Hot sauce (OPTIONAL)

    Instructions
     

    Scrambled Eggs

    • Heat oven to 350ºF.
    • Whisk together the eggs, salt, pepper, and milk. Set aside.
    • Heat a large non-stick skillet over medium-high heat. Melt butter in the skillet and add the egg mixture. Swirl and stir until mixture is just cooked, about 2 minutes.
    • Gently fold mixture over as a folded omelet if desired, and remove to a plate.

    Croissant Sandwiches

    • Cut croissants in half and place the bottoms on a small parchment-lined baking sheet.
    • Spread each with a bit of mustard (or leave the mustard off if you want to use hot sauce), and add a slice of cheese, ham, then more cheese, and bacon if desired, to each.
    • Add croissant tops to the pan, topped slightly so the cheese doesn't stick to it when it melts.
    • Bake in the oven until the cheese is just melted, about 10 minutes.
    • Move croissant tops and add a portion of scrambled egg to each sandwich. Add hot sauce if desired. Top sandwiches with croissant tops and serve.

    • If you have everything ready to go, you can make the scrambled eggs while the sandwiches heat in the oven. Then the eggs will be nice and hot.
